The Dragonfruit Mojito is what happens when you take the best long drink in the world and give it a tropical makeover. All the things that make a mojito great are still there, white rum, fresh lime, mint and fizz, but the dragonfruit turns it the most gorgeous pink and adds a soft, exotic sweetness. It is one of my favourites to make in summer, and honestly it photographs as well as it drinks.

This is a fresh, fruity mojito with a proper tropical lift. It takes about five minutes, and the only real skill is treating the mint gently. My notes are underneath, along with the quick way to pour one.

A Dragonfruit Mojito is a tropical twist on the classic Cuban mojito, built from white rum, fresh lime and mint, lengthened with soda, with dragonfruit and a little mango added for colour and flavour. The mojito itself is one of the oldest and most loved rum cocktails there is, and this version keeps its crisp, minty backbone while adding a fruity, summery edge.

Dragonfruit is mild and gently sweet, so it does not overpower the mint and lime, it just rounds them off and turns the whole drink a beautiful pink. It sits right alongside a classic mojito and a Dragonfruit daiquiri in that bright, refreshing, warm-weather category.

How to Make a Dragonfruit Mojito

Muddle the mint. Add the mint leaves, lime juice and sugar syrup to a glass, and muddle gently to wake up the mint.

Build the drink. Add the dragonfruit puree, mango and white rum, fill with crushed ice, and stir well from the bottom.

Top and garnish. Top with soda water, stir gently, and finish with a mint sprig and a lime wedge.

A Few Notes on the Ingredients

White rum is the classic mojito base, clean and light so it keeps the drink crisp. Nothing aged or heavy here, you want the rum to sit behind the lime, mint and fruit rather than dominate.

Fresh mint is what makes a mojito a mojito, so treat it with respect. Use the leaves only, and muddle them gently, just enough to release the aroma. Pound them too hard and you tear the leaves and release the bitter chlorophyll, which turns the drink grassy and sharp.

Dragonfruit puree brings the colour and that soft tropical sweetness. It is mild, so a good puree is the easiest and most reliable way to get consistent flavour and that vivid pink. Mango backs it up with a little more depth and juiciness.
