It emerged in the 1920s and 1930s, with the recipe usually credited to bartender Fernand Petiot, who refined it at the King Cole Bar in New York.
What sets it apart from almost every other classic is that it is savoury rather than sweet or sour. The tomato juice gives it body, the Worcestershire and hot sauce give it depth and heat, and the seasoning ties it all together. It is less a cocktail you sip and more one you settle into.

A Few Notes on the Ingredients
Tomato juice makes up the bulk of the drink, so it is worth using a good one. A thicker, well-seasoned juice gives the best body. Thin, watery juice makes a thin, watery Bloody Mary, and no amount of seasoning fully rescues it.
Worcestershire sauce is the secret weapon and the ingredient people most often skimp on. It brings a savoury, umami depth that the drink is missing without it. Two dashes is a starting point, not a limit.
Fresh lemon juice matters more than you would think. It lifts the savoury flavours and stops the whole thing feeling heavy. Bottled juice is flatter and does not do the same job.
Horseradish is optional but worth a mention. A teaspoon stirred in adds a sharp, sinus-clearing heat that a lot of Bloody Mary devotees swear by. Leave it out for a gentler drink.
Variations Worth Trying
- Red Snapper: swap the vodka for gin, the original 1930s serve, for a more botanical drink.
- Bloody Maria: use tequila instead of vodka for an earthier, agave-led twist.
- Michelada: build it with beer and lime instead of vodka for a lighter, Mexican-style version.
- Virgin Mary: leave out the spirit entirely for an alcohol-free brunch classic.
